Ingredients

Scale

For the Chicken Filling:

  • 2 large chicken breasts (about 1 lb), cooked and shredded
  • 1 tablespoon olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder (optional, for heat)
  • 1/4 teaspoon salt, to taste
  • 1/4 teaspoon black pepper, to taste
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese (or more for extra cheesiness)
  • 1/4 cup milk (add more if needed to adjust sauce consistency)
  • 2 tablespoons fresh cilantro, chopped (optional)

For the Wraps:

  • 4 large flour tortillas (or whole wheat tortillas for a healthier option)
  • 1/2 cup shredded lettuce or spinach
  • 1/2 cup diced tomatoes (optional, for added freshness)
  • 1/4 cup sliced avocado (optional, for creaminess)

Instructions

1. Cook and Shred the Chicken:

  1. Cook the Chicken: If you haven’t already cooked your chicken, you can sauté, bake, or grill the chicken breasts. To sauté, heat olive oil in a pan over medium heat, cook the chicken breasts for 6-7 minutes per side until golden brown and cooked through. Remove the chicken from the pan and shred it using two forks. You can also use pre-cooked chicken to save time.
  2. Shred the Chicken: Once the chicken is cooked, use two forks to shred the meat into bite-sized pieces.

2. Make the Creamy Chicken Filling:

  1. Sauté the Onion and Garlic: In the same pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until softened. Add the minced garlic and sauté for another minute until fragrant.
  2. Add the Spices: Sprinkle in the paprika, cumin, chili powder (if using), salt, and black pepper. Stir well to combine and cook for 1-2 minutes to allow the spices to bloom.
  3. Make the Creamy Sauce: Add the cream cheese and sour cream to the pan and stir until the cream cheese melts and combines smoothly with the onions and garlic. Gradually add in the shredded chicken, shredded cheddar cheese, and milk. Stir to combine, and cook for an additional 2-3 minutes, allowing the cheese to melt and the sauce to thicken. Add more milk if needed to adjust the consistency of the sauce. Once the sauce is creamy and well mixed, taste and adjust seasoning if necessary.

3. Assemble the Wraps:

  1. Prepare the Tortillas: Warm the tortillas in a dry pan over medium heat for 10-15 seconds per side, or microwave them for 15-20 seconds to make them soft and pliable.
  2. Add the Filling: Lay each warm tortilla flat on a clean surface. Spoon a generous amount of the creamy chicken mixture down the center of each tortilla.
  3. Top with Fresh Ingredients: Add shredded lettuce, diced tomatoes, and avocado slices on top of the creamy chicken filling for added freshness and crunch.
  4. Roll the Wraps: Fold in the sides of the tortilla and then roll it up tightly from one end to the other, securing the filling inside.

4. Serve:

  1. Serve Immediately: Slice the wraps in half diagonally and serve immediately. You can garnish with additional cilantro, sour cream, or a drizzle of hot sauce if desired.
